10 Easy Dinner Recipes That Don't Involve Any Cooking

Sometimes you just don't have the time or energy to turn on the oven or stove and get crazy in the kitchen. All that work just to end up with a mountain of dishes? No, thank you. Instead, try these easy, completely delicious, completely no-cooking-required recipes.
1. Asian-Inspired Lettuce Wraps 
/In a bowl, whisk together 5 tablespoons soy sauce, sliced ginger, and 1 tablespoon sesame oil. If you like heat, add a little squeeze of sriracha chili sauce. Toss 2 cups shredded carrots, 2 cups sliced purple cabbage, and 1 cup sliced cucumbers in the sauce mixture. If you'd like some added protein, add shredded rotisserie chicken. Fill your lettuce cups with the mix and top with cilantro and sesame seeds. Serves 4.
2. Tomato Gazpacho

Combine 4 large, roughly chopped tomatoes, ½ of a cucumber, ¼ cup olive oil, 1 clove garlic, ½ of a purple onion, 2 slices crusty bread, 1 cup water, 2 tablespoons red wine vinegar, and ½ of a bell pepper in your blender. Blend until smooth. Pour into serving bowls, and top with a drizzle of olive oil and diced avocado. Serves 4.
3. Shrimp Salad Po' Boy

In a bowl, mix together ¼ cup mayonnaise, ¼ cup Dijon mustard, a pinch of salt and pepper, and the juice of 1 lemon. Fold in 1 pound precooked shrimp, available at your grocery store's seafood section, and 1 cup diced celery. Line 4 baguettes with lettuce and top with the shrimp salad. Serve with potato chips for a crunch! Serves 4.
4. Mezze Meal

This is the easiest no-cook dinner when you're having a group of friends over. Round up your favorite dips at the supermarket, and serve with green and black olives, cured meats, cheese, and crusty bread. Slice some green apples or pears to add a sweet punch of flavor to the assortment. Pair the meal with a great bottle of wine, and dinner is served. Serves 4.
5. Black Bean and Queso Fresco Tostadas

Top 1 tostada with drained black beans. It's best to use pre-seasoned, canned black beans. Crumble queso fresco cheese over the top of the beans. Top with cilantro, paprika, and a squeeze of lime. Serves 1.
6. Nori Wraps With Ginger-Soy Dipping Sauce

On 1 sheet of nori (the same wraps they use to make your sushi, easily found at any Asian food market or grocery), line up your purple onion, sliced carrots, purple cabbage, and avocado along one edge of the sheet. Sprinkle sesame seeds over the vegetables. Roll away from you as if you were rolling a sushi roll, until you have a cylinder-shaped wrap. Slice in half. Serve with soy, ginger, and sesame oil dipping sauce recipe in the Asian-Inspired Lettuce Wraps above. Serves 1.
7. Seven-Layer Vegan Nachos

Spread out 1 bag of corn chips on a large platter. Top the chips with 1 can of seasoned black beans, ½ cup sour cream, 1 cup diced tomatoes, 1 diced avocado, ½ cup diced purple onion, 1 diced jalapeño, and cilantro. You can add shredded rotisserie chicken and shredded cheddar cheese for a heartier, non-vegetarian or non-vegan spin on this dinner. Serves 3.
8. Pesto, Roasted Red Pepper, and Goat Cheese Baguette Sandwich

Slice a crusty baguette into 2 slices. Spread goat cheese on one slice and pesto on the other half. Season with a pinch of pepper and add the roasted red pepper slices between the two halves to make your sandwich. You can bump up this recipe with a drizzle of balsamic vinaigrette or a handful of arugula, as well. Serves 1.
9. Green Apple, Hummus, and Veggie Wraps

Spread hummus on 1 tortilla or flat pita. Top with sliced green apples and your choice of crunchy veggies. Roll up your tortilla or flat pita like a burrito and you're good to go! Add some more flavor to this vegetarian-friendly wrap with flavored hummus. Serves 1.
10. Zucchini Noodles With Crushed Tomato Marinara
/Crush 2 cups halved cherry tomatoes in a bowl with the back of a spoon. Add 1 roughly chopped tomato, 2 cloves garlic, sliced basil, ½ cup olive oil, ¼ cup parmesan cheese, salt, and pepper to the same bowl. Cover and let sit at room temperature for at least 1 hour. Using a spiralizer, a kitchen tool used to make veggies and fruits into noodle shapes, spiral zucchini noodles from 1 zucchini. If you don't have a spiralizer, use a vegetable peeler to create thin strips of zucchini noodles and trim them to ¼- to ½-inch-wide strips to make fettuccini noodles. Toss your zucchini "noodles" with your no-cook tomato sauce and top with parmesan cheese. Serves 4.
