Ingredients
Lamb Loin 4 pieces
Salt & pepper(200 gems each) to taste
Corn Oil 60 ml
Potato boiled & mashed) 400 gems
Saffron 5 gems
Salt & pepper to taste
Basil Leaves fried in oil) 4
Rosemary sprig (dip in tempura) 1
Beetroot peeled, deep fried) 100 gems
For Coli:
Red peppers 2
Olive oil 15 ml
Salt & white pepper to taste
Salt & pepper(200 gems each) to taste

For Coli:
Red peppers 2
Olive oil 15 ml
Salt & white pepper to taste
Instructions
Season lamb with salt
and pepper.
Heat oil in a griddle and sear the meat on both sides.
Complete cooking the lamb loin in a preheated oven at 180c for 10 minutes.
Keep aside.
For Coli:
Grill red pepper till well done.
Peel under running water and blend with olive oil.
Make a puree. Season with salt and pepper.
Mashed Potato:
Add saffron to potato and season with salt & pepper.
To serve, cut each portion into smaller pieces.
Garnish each portion with a basil leaf and a rosemary sprig.
Serve with mashed potato, caulis & beetroot crisps.
